Welcome to Fall! Around here, I see pumpkins everywhere and pumpkin flavored goodies are all the rage. For a while now, I have been wanting to try an overnight oats recipe. So once fall hit, I figured creating a pumpkin overnight oats recipe sounded ideal.
This recipe is the first recipe on Sandy Apple which includes more than 5 ingredients. While I like to keep things simple and minimal, sometimes a little more is needed to get the right taste.
And this recipe needed work! The first try was far from edible. I found that using the dates for sweetness and ramping up the spices turned this pumpkin overnight oats recipe around. In the end, when you taste this recipe, you’ll feel like you’re having pumpkin pie for breakfast. Enjoy!
Pumpkin Overnight Oats
Spend five minutes prepping the oats the night before then wake up to a ready to go treat.
You'll need a bowl or jar that can hold 2 cups of liquid, measuring cups and measuring spoons.
- 1/4 cup pureed pumpkin canned works great
- 1/2 cup old-fashioned rolled oats quick oats will also work
- 2 dates, pitted either chop them fine, or whirl them in a food processor or chopper
- 1 tablespoon chia seeds
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground cloves
- 1 pinch kosher salt
- 1 cup milk use whichever milk you prefer
Add first 9 ingredients to the bowl or jar.
Pour in milk slowly to cover all of the ingredients by 1/4 to 1/2 inch.
Gently stir ingredients together.
Cover and place in the refrigerator overnight or at least 8 hours.
Stir all ingredients together. The dates will take a little work to incorporate so be patient and enjoy!
If you opened up a can of pumpkin puree for this recipe and are wondering what to do with the rest, I have a solution for you.
Put the remaining pumpkin puree into ice cube trays and freeze. You'll have little cubes you can use (2 at a time for this recipe) for your pumpkin overnight oats recipe. You also have the option to use the cubes to make a pumpkin smoothie.
I will confess, I am not a huge pumpkin fan! That’s why it took several tries to get this recipe to a place I thought it was good enough to share. I hope you enjoy it 🙂
